These bowls combine freshly cooked rice, oven-roasted chickpeas and a simple cucumber topping. They serve two, with an estimated thirty minutes of preparation and cooking. Keep the topping separate so its cool crunch survives.

Ingredients

  • 150 g dried rice
  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon oil
  • 1 teaspoon smoked paprika
  • Half a teaspoon cumin
  • Half a cucumber, diced
  • 4 tablespoons plain yoghurt
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method

  1. Heat the oven to 200 C. Dry the chickpeas well with a clean towel, then toss with oil, paprika and cumin.
  2. Spread them on a tray. Roast for about twenty-five minutes, shaking once and watching toward the end. Aim for browned edges without burning.
  3. Cook rice according to its packet so it is ready near serving time.
  4. Wash and dice the cucumber. Mix yoghurt with lemon juice, then season to taste.
  5. Divide warm rice between bowls. Add chickpeas, cucumber and the yoghurt mixture immediately before eating.

Roasted chickpeas may soften as they cool, so treat crispness as a serving-time feature. If keeping rice, follow the FSA's prompt cooling and storage guidance rather than leaving it on the counter. Assemble leftover components separately when possible.
