Mushroom and White Bean Toasts for a Proper Quick Meal
An original pan topping turns ordinary toast into a warm, savoury lunch.
Beans give this mushroom topping substance, while a little lemon juice makes the final flavour adjustable. The recipe serves two and takes approximately twenty minutes. Use a pan large enough for the mushrooms or cook them in batches.
Ingredients
- 250 g mushrooms, cleaned and sliced
- 1 tablespoon olive oil
- 1 garlic clove, chopped
- 1 can white beans, drained and rinsed
- 3 tablespoons water
- 1 teaspoon lemon juice, plus more to taste
- 4 slices bread
- Salt and pepper to taste
- A small amount of chopped fresh parsley, optional

Method
- Heat oil over medium heat. Add mushrooms and cook, stirring occasionally, until softened and lightly browned where they meet the pan.
- Add garlic and stir briefly. Add beans and the measured water.
- Warm through, then mash a few beans against the side of the pan to give the mixture a little body. Add water if it becomes too dry.
- Toast the bread while the topping finishes.
- Taste the mushroom mixture and add lemon juice, salt and pepper gradually. Spoon onto toast and add parsley if using.
Serve immediately so the toast keeps some crunch. For a packed lunch, store the topping safely and keep it separate from the bread until serving. Choose bread that suits any dietary requirements.
