The relish gives a familiar maize-meal base a warm tomato flavour and a little texture from beans. This recipe serves two to three. Allow around thirty minutes, but follow your maize-meal packet for the base because products and preferred textures differ.

Ingredients

  • Maize meal and water for two to three portions, measured according to the packet
  • 1 tablespoon oil
  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 1 teaspoon smoked paprika
  • 1 can chopped tomatoes, about 400 g
  • 1 can beans of your choice, drained and rinsed
  • 1 teaspoon lemon juice, optional
  • Salt and pepper to taste

Method

  1. Prepare the maize meal according to its packet, using a suitable pot and taking care with hot splashes. Cook it fully to your preferred consistency.
  2. In another pan, soften onion in oil over medium heat. Add garlic and paprika, stirring briefly.
  3. Add tomatoes and simmer for about ten minutes, stirring occasionally.
  4. Add beans and continue cooking until heated through and the relish has a spoonable consistency.
  5. Taste, season and add a little lemon juice if desired. Serve over the prepared pap.

Keep extra relish for another meal only with safe, prompt refrigeration. This is an adaptable serving guide, not a claim that there is one correct pap texture or one universal household recipe.
