Peanut Cabbage Noodles With a Lime-Style Finish
An original quick noodle recipe with a smooth peanut sauce and cabbage that keeps some bite.
A small sauce mixture helps these noodles come together quickly. The recipe serves two and takes around twenty minutes. It contains peanuts; choose a different recipe if that does not suit the people eating.

Method
- Whisk peanut butter, soy sauce, citrus juice and warm water in a bowl. Add water gradually until the mixture is pourable.
- Prepare noodles according to their packet. Drain when ready.
- Heat oil in a large pan over medium heat. Add washed cabbage and carrot, then cook until slightly softened but still with bite.
- Add garlic and stir briefly. Lower the heat, add noodles and sauce, then toss to coat. Add a splash of water if the sauce tightens too much.
- Taste before adding more soy sauce, which also adds salt. Serve promptly.
Keep the vegetables manageable for the pan; use two batches if necessary. Check ingredient labels for other allergens and dietary needs. Store any perishable leftovers promptly and safely rather than leaving the pan out after dinner.
